INGREDIENTS:
1 kg
basmati rice
750 gm mutton
2 large onion (finely chopped)
1 large onion (finely chopped and
fried golden brown )
½ bulb of garlic[lehsun] (chopped)
1 small piece of ginger[adarak]
(chopped )
1 tsp garam masala
salt to taste
1 ¼ liter water
1 stick of cinnamon[daalchini]
2 large spoons of oil
5-6 cloves[long]
3 cardamom[ilaichi]
8-10 seeds of black pepper[saboot kali
mirch]
2-3 cassia (tejpaat)
METHOD:
Soak rice for ½ hour. Wash mutton
thoroughly.
Boil the motton in the pressure cooker
along with chopped onion, little
ginger & garlic, little salt, 3
cloves, cinnamon, cardamom. Boil for
15 minutes.
After boiling sieve the mutton pieces
from broth and fry them in oil till
light golden and keep them aside .
Stain the water in the sieve and crush
the boiled onion pieces to the
maximum. Keep this stock aside .
Add little oil and garam masala in the
cooker, 2-3 leaves of cassia, fried
onion, finely chopped garlic, ginger.
Then add crushed cloves cardmom and
black pepper. Fry them on slow fire
till oil gets separated . Then add
fried mutton pieces and rice into it.
Fry with masala for 5-10 minutes then
add only that much stock (water) which
you feel will be required to cook the
rice. Boil it on full flame without
covering. After the first boil close
the lid of the cooker and cook till
first whistle.
Garnish with fried onion and serve
hot.
