INGREDIENTS:
2 cup refined wheat flour (maida)
1 tsp baking powder
1/4 tsp soda bi-carbonate (baking
soda) 2 tbsp oil + to fry
salt as per taste
1/2 cup water
1" piece of ginger
2-3 green chillies
1/3 cup split black gram (urad dal)
soaked for 2-3 hrs preferably
overnight
a pinch asafoetida (hing)
1 tsp coriander powder
1/4 tsp cumin powder
1/2 tsp red chilli powder
1/4 tsp fennel powder (saunf)
1/2 tsp sugar
4 tbsp ghee
METHOD
Sieve flour with baking powder,baking
soda and salt.Add 2 table spoon of
ghee and rub between your palms to get
bread crum texture. Knead into medium
soft dough with water. Cover it with
the wet cloth and set aside.
Finely chop ginger and green
chillies.Coarsely grind urd dal using
a little water (thick mixture).Heat
little oil in a kadai .Add chopped
ginger,chopped green
chillies,asafoetida and all the
powdered masala.Stir well add ground
dal.Cook till all the moisture is
almost dried up.Add sugar and salt and
mix well.Remove off the flame.Let the
mixture cool.
Make 12 balls of the flour
dough.Flatten each ball between your
palms so that they are thinner around
the edges and thick in the centre
.Place a little stuffing in the centre
and bring the edges together to form a
ball . Flatten slightly.Heat oil in a
kadai.Fry kachoris on a slow flame
till golden brown and crisp.Serve with
